- Grind the Meat Yourself: Ideally, you should grind the meat from the cut of your choice. While it’s extra work, it’s worth it as frozen burgers are often loaded with preservatives and lack the flavor of freshly ground meat. If you’re grinding the meat yourself, after shaping it, make sure to have warm water nearby to handle it properly. You can choose any meat you like, preferably beef or veal, although pork can also be used. Avoid overly lean cuts like tenderloin or eye of round, as we want a meat with a bit more fat content for burgers.
- Don’t Overdo the Seasonings: Simply adding a bit of salt, garlic, and parsley to the meat is sufficient. If you want to go further, you can add some onion, but if the meat is good quality, it’s best not to over-season it. Remember, less is more.
- Use Good Bread: It’s important to use fresh bread from a bakery that makes it in a traditional, artisanal way.
