BAKE YOUR PERFECT PIZZA IN YOUR KAMADO ARGENTINO

Many ask me how to prevent the pizza base from burning. This doesn’t have to happen if you follow certain guidelines. First of all, it’s a myth that a pizza has to be baked at as high a temperature as possible. As a general rule, the thinner the pizza base, the higher the temperature of the Kamado Argentino. For a nice pizza base no more than one millimeter thick, a temperature of 300°C is ideal. But for a base of 2 millimeters or more, the pizza should be baked at a lower temperature, otherwise, the base will burn before the dough is done. Use a temperature between 250 and 275°C for a base of 2 millimeters or more so that the base cooks slower and more evenly without burning. Besides this, it’s very important to preheat the Kamado Argentino.
Step by Step:
- Preparation: Fill the Kamado Argentino with enough charcoal, just up to the edge of the fire ring. Make sure the charcoal pieces are not too large.
- Light the charcoal using 1 fire starter. After lighting it, leave the front vent at the ceramic base and the top vent completely open for about 20 minutes until the charcoal is glowing.
- Maintain the Kamado Argentino at a temperature of 300°C using the front vent and the cast iron valve. This allows the ceramic base to heat properly.
- After approximately 5 minutes, place the deflector and the smooth pizza plate/baking stone on top of it. Close the lid and let the smooth pizza plate heat for about 15-20 minutes. Don’t let the temperature rise higher than desired (depending on the thickness of the base; maximum at 300°C).
- Finally, my golden advice: Just before you slide the pizza onto the smooth pizza stone, sprinkle a little flour or cornmeal on it. This prevents the dough from sticking and allows you to gauge how hot the pizza plate is. If the flour doesn’t change color, it’s not hot enough yet. It should slowly brown and develop a delicious smell. If it burns immediately, the stone is too hot. In this case, wipe the baking stone three times with a kitchen towel.
