BREAD
Ingredients:
DOUGH
– 1000 gr. bread flour
– 600 gr. water (for the bread)
– 20 gr. fresh yeast
– 20 gr. salt
– 10 gr. butter
Instructions:
Preparation of the dough:
1. Heat the water to 37°C and dissolve the yeast in it.
2. Add the flour and knead for a few minutes, then add the rest of the ingredients and knead for about half an hour until the dough is elastic and no longer sticks to your hands.
3. Cover with a cloth and let it rise in a bread basket or on a wooden surface covered with a damp cloth for about an hour.
4. Repeat the process, kneading for less time, and let it rise until it doubles in size before baking.

Instructions:
1. Start the Kamado Argentino, place the elevator, and when it reaches 270°C, add the deflector with the elevator and the pizza stone on top, stabilizing at around 210°C.
2. Place the bread on the stone directly or on parchment paper, score it lightly with a very fine blade, and spray it with water.
3. Bake for 35-45 minutes.
4. When removing it, let it rest on a rack.
