CHRISTMAS TURKEY WITH GARLIC
INGREDIENTS
1 SADIA turkey
3 garlic cloves
100 ml white wine
A handful of parsley
100 g butter
1 spring onion
Salt and pepper
STEP BY STEP
Place all ingredients except the turkey in a food processor and process them to marinate the turkey in the refrigerator for at least eight (8) hours. If the marinade is too thick, add more wine. If it’s too thin, add more onion.
Once the turkey is removed from the refrigerator, place the remaining marinade in a bowl to baste the turkey during cooking.
Light the Kamado Argentino with very little charcoal, 50% of the usual amount. If you have any deflector stones, use them for the entire cooking process. If not, place all the charcoal against one side of the grill, and cook the turkey on the other side. If you like the flavor of wood, we recommend adding a handful of applewood smoking chips.
The temperature we’re aiming for is 110°C to 130°C, and the cooking time is 2 to 2 and a quarter hours.
Using a meat thermometer for this cooking is essential.
