MARINATED PORK AND PINEAPPLE SKEWERS
INGREDIENTS
1 pork shoulder (bondiola de cerdo or Magret)
1 pineapple
50g garlic powder
20g ginger powder
20g sea salt
10g white pepper
300ml soy sauce
150g black chia seeds
150g sesame seeds
Wooden skewers
STEP BY STEP
Cut the pork shoulder and pineapple into cubes.
Season the pork shoulder with all the mentioned condiments and marinate in a bowl with soy sauce for at least 6 hours in the refrigerator.
Moisten the skewers before starting to assemble them and place a cube of pork followed by a cube of pineapple.
Coat the exterior with the seeds and place on the Kamado Argentino with direct heat at 220°C / 240°C. Cook for 8 minutes, then rotate the skewer with steel tongs. You can brush with the reduced marinade after rotating.
After 10 minutes, remove the skewer.
