There’s no doubt that the best Ribs are cooked at low temperatures and in a Kamado Argentino.

Here’s the recipe for a RUB that’s truly wonderful. What’s a RUB? It’s a mix of spices that we’ll use to coat the ribs.

This is the Kamado Argentino RUB:

– 1 cup packed dark brown sugar
– 1 cup mascabo sugar
– 1/2 cup paprika
– 1/2 cup garlic powder
– 3 tablespoons ground black pepper
– 2 teaspoons ground ginger powder
– 2 tablespoons onion powder
– 2 teaspoons ground rosemary

Another important point is the meat supplier; look for ribs that are nice and meaty.

The cooking process we’re aiming for is at low temperature.

**STEP BY STEP:**

**1. Preparation of the RUB:**
– In a bowl, mix all the RUB ingredients: dark brown sugar, mascabo sugar, paprika, garlic powder, ground black pepper, ground ginger, onion powder, and ground rosemary. Mix well to ensure all ingredients are evenly integrated.

**2. Preparation of the Ribs:**
– Make sure to get good quality Ribs, preferably nice and meaty.
– Clean the Ribs, removing any excess fat and membranes.
– Apply a generous layer of the RUB to all surfaces of the Ribs. Massage gently to ensure the RUB adheres well to the meat.

**3. Cooking in the Kamado Argentino:**
– Light the Kamado Argentino and wait for it to reach a low and steady temperature, around 110-130°C.
– Place the Ribs on the Kamado grill, preferably using the indirect cooking method to prevent them from burning.
– Cook the Ribs at low temperature for several hours, usually 4 to 6 hours, depending on the thickness of the Ribs and your preferred level of doneness.
– During cooking, you can add wood chips for smoking and enhancing the flavor.
– Periodically, spray the Ribs with a liquid to keep them moist and flavorful. You can use a mixture of apple juice, apple cider vinegar, and water.

**4. Finishing and Serving:**
– Once the Ribs are tender and fully cooked, remove them from the Kamado.
– Let the Ribs rest for a few minutes before cutting them.
– Serve the Ribs with your favorite sides and enjoy this delicious smoked meat dish.
